Method:
- Preheat the oven to 180C (350F) and grease a 1lb loaf tin.
- In a mixing bowl, combine the self-raising flour, caster sugar, bicarbonate of soda, baking powder, and ground ginger.
- Mix the plant milk and apple cider vinegar in a separate bowl, then add the vegetable oil.
- Gradually pour the wet ingredients into the dry ingredients and mix until well combined.
- Pour the batter into the loaf tin and bake for 35-40 minutes or until a toothpick inserted in the centre comes out clean.
- Let the cake cool in the tin briefly before transferring it to a wire rack to cool completely. Garnish with the chopped stem ginger and spoon over the syrup
